Guan's knows a lot about Mushrooms and we bring
our fresh mushrooms to the retail and food service industries.
Our mushrooms are special. They are grown in windowless houses,
carefully controlled for temperature and humidity. Then because
mushrooms need gentle handling, they are picked and packed
very carefully. Their package is designed for protection and
ventilation so they keep their freshness until you use them.
No preservatives are ever used and they are not washed because
mushrooms lose their freshness soon after washing. What you
should know about Mushrooms:
Washing: Gently wash just the number
you are going to use or wipe them with a damp cloth. Store
the rest.
Storage: Always store them covered in the refrigerator
in their Guan's package. Never store mushrooms in airtight
containers.
Freezing: Whole fresh mushrooms when
frozen at home can become watery and rubbery. The best way
is to cook them first, then freeze. Partially sauté
whole or sliced mushrooms in butter or margarine until just
about cooked. Cool quickly, then place in containers and freeze.
Mushrooms may also be blanched before freezing.
Peeling: Don't. Mush of the flavor
is in the skin. If stem ends seem dry, trim away a thin slice.
Using: Mushrooms are marvelously versatile.
Try them raw with dips or in salads. They can be creamed or
sautéed or marinated. Chop the stems and stuff the
caps. Slice them or dice them. Cook briefly for best flavor
and enjoy them in stir-fry, entrées, pates, appetizers
